Pea and Pesto Pasta


  1. Cook some pasta. At the last few minutes, add some frozen peas to the pot.
  2. Once cooked, drain reserving a small amount of the water.
  3. Mix in a jar of pesto (get vegetarian pesto if you’re being strict - normal pesto contains parmesan which isn’t strictly vegetarian) and as much of the pasta water as needed to make a good sauce.
  4. Season and serve with cheese on top if you like. You can add other veg like asparagus, spinach or cherry tomatoes if you fancy.
